Ginger Cilantro Asian Noodles

This simple Asian Noodle dish is delightful. The combination of the flavors of the ginger root, cilantro, green onions, paired with the soy, sesame and oyster sauce gives as much to our sense of aroma as to our taste. It's very good hot, but you can also serve at room temperature. It's an easy, quick meal, or side dish and great served for a light lunch.

Ingredients
  

  • 1 lb Spaghetti or Asian noodles(454g)
  • 2 tsp vegetable oil
  • 1/2 cup green onions (white and green parts) (80g)
  • 1 tbsp minced ginger root (8g)
  • 1/2 cup chopped cilantro (35g)
  • 1 tbsp toasted sesame oil (20g)
  • 1 tbsp oyster sauce (20g)
  • 2 tbsp soy sauce (40g)
  • additional chopped green onion and cilantro as garnish

Instructions
 

  • Cook the pasta (Asian noodles) according to the package directions. When the pasta has about 1 or 2 minutes left in the cooking time, start to heat the sauté pan or wok. This progresses quickly.
  • Use a heavy sauté pan, or wok, to heat 2 teaspoons of vegetable oil. When the oil is hot, add the green onions, ginger and cilantro. Toss for one minute. By this time the pasta should be cooked.
  • Immediately drain the pasta (save a bit of the pasta water). Dump the pasta into the pan holding the green onions, ginger and cilantro. Toss to combine, then add the toasted sesame oil, oyster sauce and soy sauce. Toss again to coat the pasta with the oil, oyster sauce and soy. If it is too dry add a small amount of the pasta water.
  • You may wish to add a bit more of the soy, sesame oil or oyster sauce for your personal taste. To serve, use tongs to twirl some of the pasta on to a heated plate and sprinkle the top with the cilantro/green onion garnish.
